As easy as mixing a quick crust and patting it into place — no rolling pin necessary!
1 can cherry (or blueberry) pie filling
Crust:
1/2 cup shortening
1/2 cup sugar
1 egg
1 Tablespoon water
1 teaspoon vanilla
1 teaspoon baking powder
2 cups flour
Preheat oven to 375° F.
Pat crust dough in a 7×11 pan and up edge to contain filling. (If you like, save some dough to sprinkle on top, or to roll out and make a lattice or cookie-cutter topping.)
Add pie filling.
Bake for 30 minutes.
