Inver Grove Heights clears way for brew pub

In January, the Inver Grove Heights City Council approved the first reading of ordinance amendments to city code that would allow brewpubs to operate in the city. 

A brewpub is described as a brewery that brews and sells its own beer onsite, that also operates as a full-service restaurant. 

The discussion on brewpubs began early last year when Lakeville Brewing Company purchased the former Ruby Tuesday site, 9051 Buchanan Trail at Arbor Pointe.

Because city code had not previously addressed brew pubs, making way for the new brewery has been tricky.

Along with changes to the code, the state needed to inspect the brewing equipment that will be manufacturing beer at the site. That caused approval for the brewery to take much longer than just simply getting a liquor license. 

At the Inver Grove City Council meeting on Feb. 12, the council unanimously agreed to an ordinance amendment that makes brew pubs a permitted use in certain commercial districts, as well as a planned use development amendment to modify the restaurant site plan for needed brewery additions.

Building additions discussed include a 1,700-square-foot expansion of the restaurant, as well as an outdoor patio.

The new brewpub will be the second location for the brewing company, with the first located in Lakeville. 

“We’re really excited to be able to open up our second location and make something really special here in Inver Grove Heights,” said Lakeville Brewing Company co-owner Don Seiler at the council meeting.

Mayor George Tourville added he’d like to hold a special event once the brewpub has settled in and opened to the public.
